There’s something magical and fairy-like about the combination of wild blackberries and fragrant lavender that takes me right back to childhood summer, wandering through rows of sun-dappled blueberry bushes with purple-stained fingers and the scent of wildflowers in the air.

Today, I’m sharing one of my absolute favorite summer desserts that captures this enchanting pairing in the most delicious way possible! It’s lightly sweet, with simple ingredients that really lets the taste of the season shine.

Ingredients:

A Dessert Born from Wanderlust

I first discovered this recipe a few summers ago during a solo getaway to a little coastal town where my rental cottage was surrounded by wild blackberry bushes. A nearby Farmer’s Market sold baby blue bouquets of fresh lavender, and inspiration struck like lightning. After some experimentation (and a few delicious failures), this cobbler was born—now it’s requested at every summer gathering I host.

What Makes This Cobbler Special

Unlike traditional cobblers with their structured biscuit topping, this version features a lighter, almost cloud-like topping that melts perfectly into the juicy berries below. The subtle hint of lavender doesn’t overwhelm but adds an aromatic complexity that elevates this dessert from simply comforting to conversation-worthy.

Steps:

1. Wash and dry your blackberries! I like fresh blackberries, but frozen works too, so long as you let them defrost first.
– I use baking soda and cold water to rinse them.

2. Measure out your ingredients! I like to have everything ready, so that when I cook or bake, I’m not scrambling to find anything. Here I’m measuring 1/4 cup of honey to sweeten the dish.

3. Here I’ve added the blackberries, honey, lemon juice, vanilla, cornstarch, and lavender (which I blended for a finer consistency) and salt. I mixed the cornstarch slurry and all the ingredients separately, then added it all to the bottom of the baking dish so that I wouldn’t have to over-mix or crush the delicate berries.

4. For the crumble biscuit layer, grate your cold butter like it’s cheese, and add to the dry ingredients. Cold butter and cream cheese make this dough more like a pie crust for ultimate flakiness! Mold your dough, then tear into chunks and layer how you like over the berries.

5. Transfer to the 400-degree oven and bake 40-45 minutes or until the berries are bubbling and the biscuits golden brown. Serve warm with a scoop of ice cream for a delicious, sweet summer treat!

Blackberry Lavender Cobbler

Ingredients

For the Berry Filling:

  • 6 cups fresh or frozen blackberries or blueberries
  • 1/4-1/3 cup honey or granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 1 tablespoon dried lavender optional, but it really elevates the flavor!
  • 1/4 teaspoon kosher salt

Cream Cheese Crumble:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 stick 8 tablespoons cold salted butter, grated on a box grater just like cheese
  • 1/2 cup buttermilk plus more as needed
  • 3 tablespoons honey
  • 6 ounces cold cream cheese cubed
  • coarse sugar for sprinkling (optional)

Instructions

  • Preheat the oven to 400 degrees F. Grease a 9-12 inch pie plate or 9×13 inch baking dish with butter.
  • In the bottom of the baking dish, combine the blackberries, honey, lemon juice, vanilla, cornstarch, lavender (if using) and salt. Toss well to combine.

  • In a medium bowl, combine the flour and baking powder. Add the butter and toss together. Add the buttermilk and honey, and mix until just combined, adding more buttermilk if needed. Fold in the cream cheese.

  • Roll the dough out into a 1-inch thick circle or rectangle (depending on your baking dish) and cut into 12-16 biscuits. Place the biscuits over the berries. Brush each biscuit with buttermilk and sprinkle with coarse sugar.

Serving Suggestions

Serve warm with a scoop of vanilla ice cream that slowly melts into the warm cobbler, creating rivers of creamy goodness among the berries. For a more sophisticated dinner party vibe, try it with a dollop of crème fraîche or lavender-infused whipped cream!

Make-Ahead Tips

You can prepare the berry mixture and the dry ingredients for the topping separately up to a day in advance. Just keep the berry mixture refrigerated and combine everything just before baking for that fresh-from-the-oven experience.
