Hello there, and cheers to spring!

I missed my post for Ostara, or the spring equinox, on March 20th this year. But I didnโ€™t miss spring planting!

Our garden is looking nice so far. Itโ€™s not our ideal, itโ€™s not perfect, but we finally have our first harvest since starting it TWO YEARS AGO! Woohoo!

So far, what we have eat from what we have planted is:

  • Swiss chard, a peppermint variety
  • Cabbage! Itโ€™s SO cute!
  • Baby lettuce
  • Herbs: chives, lemon thyme, and cilantro

So, how to cook this all up?

Iโ€™m thinking a salad with the swiss chard and lettuces, topped with dressing made with yogurt, lemon, garlic, olive oil, salt and pepper, chives, lemon thyme, and cilantro! But Iโ€™ve never had a whole salad of mostly raw swiss chard, and I wonder how harsh it could taste. I may have to โ€œcutโ€ it with some mixed veg from the grocery store, but maybe that kills the vibe of eating just straight out of our garden.

For the cabbage, Iโ€™m just gonna do a super easy coleslaw! I thought about making okonomiyaki, but since Iโ€™m bringing this to share, I worry that the fried veggie pancake would grow soggy. So, coleslaw it is.
